Cauliflower is often underestimated, but it has a very pleasant taste, which makes it flexible for use in various recipes. Get out of the stereotypes of cauliflower in pickles and prepare this gratin. It is quite sufficient for a main meal, but if you reduce the quantities, you can serve it as a side dish to a juicy steak.

Required products :

  • 6 pork shoulder cutlets
  • 2 tablespoons butter
  • salt and pepper

for cauliflower gratin:

  • 850 grams of cauliflower
  • 200 grams of cheddar
  • 200 grams of yellow cheese (or other cheese of your choice)
  • 200 grams of cream cheese
  • 2/3 tea cup cream
  • 100 grams of finely chopped leeks
  • 150 grams of finely chopped bacon
  • 1 clove garlic or garlic powder
  • salt and pepper

Method of preparation :

Preheat oven to 200 degrees.

Chop the cauliflower into small pieces and blanch for 5 minutes in boiling water, drain.

Fry the bacon to make it crispy, transfer to a plate and leave the fat in the pan.

Mix the cream cheese, cream and most of the grated cheese, leaving a little to sprinkle at the end.

Cut leeks into small pieces and mix with the cheese. Combine with cauliflower and finely chopped bacon. Season and pour into a pan, sprinkle with remaining cheese and bake for 25-30 minutes, until done.

In the meantime, you can fry the chops in bacon fat or grill them. The choice is yours, season the finished cutlets with salt and pepper. Serve immediately, putting a little butter on the warm meat.
