How To Cook Pork Chops With Capers And Sweet And Sour Sauce - Recipe

Required products :

  • 2 pork chops with bone
  • salt to taste
  • 1 1/2 teaspoons sugar
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 thinly sliced ​​garlic cloves
  • 1/4 teaspoon wine vinegar
  • 3 sprigs of rosemary
  • 1 tablespoon capers
  • 2 tablespoons butter, cut into cubes

Method of preparation :

Season the meat with salt and half a teaspoon of sugar.

In a pan, heat 1 tablespoon of oil and fry the chops on high heat until they acquire a golden crust for about 3 minutes, then turn and fry on the other side for 1 minute.

Transfer them to a plate and reduce the heat. Add the remaining fat and add the onion and garlic. Fry them until browned. Add the vinegar and the remaining sugar, cook until the vinegar has almost evaporated. Add rosemary, capers and 1/2 cup water to the pan. Season with salt and reduce the heat. Add the butter and stir, cook until the sauce is thick and shiny.

Return the meat to the pan, placing the darker side up. The cutlets should be cooked slowly in the sauce, stirring occasionally and pouring the liquid over them. After about 3-5 minutes they are ready.

Serve them on a plate and add the sauce, capers and caramelized onions.
