Fry the turmeric in hot olive oil for 2 minutes or until bubbles begin to form. Pour 1 1/2 teaspoons of chicken broth, couscous, 1/2 teaspoon black pepper and 1/4 teaspoon salt. Once it boils, reduce the heat, cover and simmer for 10 minutes. Sprinkle with parsley, stir and set aside.
Melt the butter. Season the pork chops with the remaining 1/2 teaspoon of black pepper and salt and fry together with the onion, garlic and thyme for 4 minutes. Turn the pork chops, add the tomatoes, wine and capers. Cook for another 2 minutes or until done. Transfer the chops to a serving platter.
Pour the remaining 1/4 tea cup of chicken broth into the pan and cook for 1 minute. Remove the thyme stalks and pour the pork chops with the sauce and couscous.
