Required products :

  • 1/2 teaspoon flour
  • 1 tablespoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 tea cup olive oil
  • 3-4 pork chops, boned
  • salt and pepper to taste

For the sauce :

  • 1 1/3 tea cup chicken broth
  • 1 tablespoon fresh herbs, finely chopped / rosemary, thyme or sage /
  • 1 tablespoon unsalted butter

Method of preparation :

  • In a shallow dish, mix the flour, smoked paprika, salt and pepper. Stir.
  • Rub both sides of the pork chops with 1 tablespoon of olive oil and season with salt and pepper to taste.
  • Roll in the flavored flour and shake off the excess.
  • Heat the remaining olive oil in a large skillet over medium heat.
  • Add the fillets and fry them for about 3-4 minutes on each side until golden brown.
  • Transfer them to a plate and cover with aluminum foil.
  • Add the chicken broth to the pan, stir with a wooden spoon and cook until slightly thickened and halved.
  • Add the butter and fresh herbs and mix well.
  • Return the chops to the pan, along with the separated sauce, reduce the heat and cook for another 2-3 minutes.
  • Serve the pork chops and herbal sauce warm, garnished with your choice.
