Season the meat with salt and pepper and fry it in 2 tablespoons of butter in a pan for about 4-5 minutes per side. Transfer to a plate and cover with foil to keep it warm.
In the same pan, melt the remaining oil and fry the pineapple for 2-4 minutes until it starts to brown.
Add the rum and continue to cook for 1-2 minutes until the liquid begins to be absorbed. Add the sugar and after a minute, when the pineapple is caramelized, remove from the heat.
Serve the meat with pineapple, sprinkle with mint, garnish with boiled rice and lime.
