Required products :

  • 1 and 1/4 tea cups chicken broth
  • 1 can of coconut milk
  • 1 onion, thinly sliced
  • 1 red pepper, peeled and diced
  • 1 packet of mushrooms, cut into quarters
  • 2 tablespoons red curry paste
  • 3 tablespoons olive oil
  • 500-800 grams of pork leg, cut into cubes
  • 1 tablespoon beehive salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon coriander, chopped

Method of preparation :

Pour the chicken broth, coconut milk, onion, pepper, mushrooms and curry paste into a slow cooker.

Heat the olive oil in a pan. Season the pork with salt and pepper and fry in batches until browned. Transfer the fried meat to the slow cooker.

Pour the remaining 1/2 cup of chicken broth into the pan, stirring to clean the remaining pieces from frying the meat. Pour the liquid into the slow cooker, cover and cook over high heat until ready (about 5 hours).

Remove the separated fat with a slotted spoon during cooking on the surface of the dish and serve. Sprinkle the stew with fresh coriander and serve with a garnish of cooked rice if desired.
