Required products :

  • 4 pork fillets 150-170 grams each piece
  • 1 kg of potatoes
  • 750 grams of carrots
  • 5 tablespoons olive oil
  • 50 grams of butter
  • 1 tablespoon brown sugar
  • 50 grams of yellow cheese
  • 2 tablespoons breadcrumbs
  • 75 grams of walnuts
  • 30 grams of fresh rosemary
  • 5 large dill stalks
  • 1 teaspoon dried and crushed mint, oregano, basil and savory
  • salt, pepper
  • baking dish measuring 22 x 30 centimeters

Method of preparation :

Wash and dry the fresh rosemary, saturate 2/3 of it (use only the leaves), and leave the rest to decorate the finished dish.

Wash the potatoes, peel them and cut them into large pieces. Peel the carrots and cut them into thick circles.

Turn the oven to 175 degrees.

Mix the vegetables and rosemary in a pan, sprinkle them with three tablespoons of olive oil, stir. Season with salt, pepper, add brown sugar and bake for about 45 minutes, stirring occasionally (not very often).

Meanwhile, grate the cheese, chop the walnuts and washed fresh dill.

Melt the butter and mix it with walnuts, yellow cheese, dill, breadcrumbs, herbs (oregano, basil, mint and savory), salt, pepper.

Rinse and dry the fillet, fry it in 2 tablespoons of olive oil for 2 minutes on each side (without closing with a lid to form a crispy crust).

Gather the vegetables at one end of the dish and arrange the meat in the free part. Season with salt and ground black pepper, sprinkle with the combination of walnuts, spices and yellow cheese, return to the oven for another 10 minutes at the same temperature.

Serve with fresh rosemary garnish.

Enjoy your meal!
