Required products :

  • 1 pork head
  • 4 pork legs
  • 500 grams of pork belly
  • 10 cloves garlic
  • 1 teaspoon wine vinegar
  • salt to taste

 

Method of preparation :

Fry the head and legs, scrape them and cut into pieces. Soak them in cold water for 5 hours. Then scrape again, wash for a long time under cold running water.

Also fry the belly, scrape and wash.

Scrape the legs again.

When everything is perfectly clean, put in a large saucepan, pour 5-6 liters of cold water and place on the stove without salting. Bring the water to a boil over high heat, periodically removing the foam that has formed, then reduce the heat.

Cook the patch for 4 hours or as long as the meat needs to begin to separate from the bones and the belly to soften enough.

Remove the meat and belly from the broth and cut them into small pieces. Put them in a clean saucepan, add the legs and pour the broth, which you have previously strained 2 times with gauze.

Put the pan on a very low heat and let the soup boil for a few hours until the broth has evaporated in half.

Make a garlic sauce by crushing the garlic cloves with salt to taste, then pour in the vinegar and stir. Serve it separately from the pork patch so that everyone can put as much as they want in their portion.
