Required products :

  • 1 cup cherries
  • 4 teaspoons wine vinegar
  • salt and pepper
  • 600 grams of pork shoulder meat, cut into 4 schnitzels
  • 3/4 tea cup flour
  • 3 eggs
  • 2 tablespoons Dijon mustard
  • 3 teaspoons panko breadcrumbs
  • 1 tablespoon + 1 1/2 teaspoon fennel seeds
  • 1 teaspoon oil
  • 1 fennel, thinly sliced
  • 1 lemon, cut in half lengthwise
  • 1/2 teaspoon chopped basil leaves

Method of preparation :

Put the cherries in a bag and lightly press them with your palms to release the stones, then cut them in half with your hands and clean. Transfer the cherries to a bowl, add salt and pepper and 2 tablespoons of vinegar. Set aside to serve.

Beat the eggs, put the flour and breadcrumbs in shallow plates. Add 1 tablespoon of fennel seeds to the breadcrumbs.

Season the meat and bread it first in the flour, then in the egg and finally in the breadcrumbs.

Fry the meat on high heat until golden on all sides. Put it on a wire rack to drain off excess fat, but also to keep the crust crispy.

Put the chopped fennel in a large bowl and squeeze half a lemon. Cut the remaining lemon into pieces and leave to serve.

Drizzle the fennel with the remaining 2 tablespoons of vinegar and season with salt and a lot of black pepper. Stir and squeeze the salad several times with your hands. Add the basil.

Serve 4 servings, adding salad and schnitzel to each, add lemon and cherries and sprinkle with fennel seeds.
