Required products :
- 700 grams of pork fish, cut into thin steaks
- 3 eggs, lightly beaten
- 2 teaspoons Dijon mustard
- 3/4 tea cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons breadcrumbs
- 4 tablespoons oil
- 1 lemon, sliced
Method of preparation :
- Slightly thin the steaks with a meat hammer to a thickness of about 6-7 millimeters.
- In a shallow dish, mix the eggs and mustard. Stir.
- In another bowl, mix the flour with the salt and pepper. Stir again.
- Pour the breadcrumbs into a third plate.
- Roll each steak in flour, dip in egg, then roll in breadcrumbs.
- Heat 1 tablespoon oil in a large skillet over medium heat.
- Fry the pork schnitzels on both sides until golden brown for about 2-3 minutes. Add oil when needed.
- Work in batches and do not overfill the pan, as the temperature of the oil will drop sharply and the meat will remain greasy.
- Allow the schnitzels to drain on kitchen paper.
- Serve with lemon slices.
