Required products :

  • 2 kg shank with leather
  • 2 cloves garlic, thinly sliced
  • 15 grams of sage, finely chopped
  • 3 large onions, coarsely chopped
  • 2 tablespoons oil
  • 1 tablespoon ground sea salt

Method of preparation :

Allow the meat to drain for about half an hour in a bowl and dry well with kitchen paper.

Make a few deep incisions in the skin with a very sharp knife so that you reach the fat beneath it, but not the meat.

Put the meat uncovered in the freezer for an hour and a half, then leave on the hob for 30 minutes to relax.

Turn the oven to 230 degrees. Put the meat skin side down in a pan and pierce it with a knife. Put slices of garlic and a few leaves of sage in the holes, season with salt.

Sprinkle the onion slices around the shank and pour olive oil, add about 400 milliliters of water, which should cover the bottom of the pan.

Bake for 25 minutes and reduce the temperature to 180 degrees. Continue baking for another 2 hours. If necessary, add a little water during cooking.

If during this time the shank has not become golden and crispy, increase the temperature again to 230 degrees and bake for another 10 minutes.

When ready, cover with foil and leave for 20 minutes after baking.

Note: Drying meat at the beginning of processing (with paper and in the freezer) is important, because when the skin is completely dry, the oil you apply will remain on it and will protect it from tearing and disintegration.
