Required products :

  • 1 pork shank (600-800 grams)
  • 2 tangerines
  • 1 tablespoon coarse sea salt
  • 1 tablespoon mustard powder
  • 1 tablespoon mixture of dried spicy spices
  • a mixture of different types of pepper to taste
  • 2 stalks of celery
  • link fresh dill

 

Method of preparation :

Rub the shank with coarse salt, dry mustard and a mixture of different types of ground pepper, spices. Leave in the cold overnight to marinate.

Then put on a layer of sliced ​​tangerines, chopped dill, celery and wrap tightly in aluminum foil.

Place in a pan, pour 250 milliliters of water and place in the oven (turned on at 180-200 degrees).

After an hour, pour water back into the bowl and let the dish cook for another hour and a half at a temperature of 180 degrees.

When you remove the shank, unroll the foil and check the readiness with a wooden skewer or toothpick.

Make cross-cuts on the surface, turn on only the top rack of the oven and bake the meat (with foil developed) until crispy skin forms on top (about 15-20 minutes).
