Required products :

  • 1 tablespoon olive oil
  • 700 grams of pork, cut into cubes
  • 3 tablespoons flour
  • 65 grams of pancetta
  • 2 onions, finely chopped
  • 2 cloves garlic, finely chopped
  • 250 milliliters of white wine
  • 150 grams of mushroom mushrooms
  • 250 milliliters of broth
  • 1 tablespoon parsley
  • 100 grams of wild mushrooms
  • 75 milliliters of cream

Method of preparation :

Heat the fat in a pan and fry the meat, sprinkle with flour and continue cooking until browned on all sides. Remove from the heat (if necessary, fry the meat twice).

Add the pancetta to the pan and fry for one minute. Put garlic and onion, stew for 2 minutes. Drizzle with the wine and scrape off any leftover pan that has stuck to the bottom.

Return the meat to the pan, add the mushrooms, broth and thyme. Cook for 15-20 minutes under a lid. Add the wild mushrooms and cream, continue to cook for another 5-10 minutes until the sauce thickens. Season to taste and serve with mashed potatoes or cabbage salad, and why not with cauliflower puree.
