Required products :

  • 500 grams of pork fillet
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary, chopped
  • 1 and 1/4 teaspoons of sea salt
  • 1 teaspoon black pepper
  • 340 grams of mixed mushrooms, coarsely chopped
  • 1 cup leek, cut into circles
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons butter
  • 3/4 cup instant polenta
  • 2 tablespoons + 2 teaspoons parmesan, grated

Method of preparation:

Turn the oven to 200 degrees.

Spread 2 teaspoons of pork fillet. Stir in a bowl of rosemary, 1/2 teaspoon of sea salt and pepper and season the pork. Heat a skillet over medium-high heat, then arrange the pork in it and cook until browned on all sides of the fillet. Transfer the pan to the oven and bake the meat to a center temperature of 62-63 degrees or for about 14-16 minutes. Remove the pork and place it on a cutting board, preserving the separated fat. Set the meat aside for 10 minutes.

Put 4 teaspoons of olive oil in the pan and cook the mushrooms with 1/2 teaspoon of black pepper. Stir frequently until browned (4-5 minutes). Add the leeks and stir until the leeks are soft (about 6 minutes). Put 1 tablespoon of butter to melt. Remove the pan from the heat, put fresh parsley in the pan, close with a lid and set aside.

Prepare the polenta according to the instructions on the package, without adding salt and fat. Pour in the hot polenta parmesan, 1 tablespoon butter, 1/4 teaspoon salt and stir.

Cut the pork fillet into 12 pieces. Serve 3 pieces in a plate, garnish with 1/2 cup of hot polenta and 1/2 cup of the mushroom mixture.
