Required products :

  • 1 1/2 teaspoons cornmeal
  • 1/2 teaspoon salt
  • 1 1/4 tea cups hot water
  • 1 tablespoon melted butter
  • 4 eggs
  • frying oil

Method of preparation :

Mix the cornmeal well with the hot water and butter, cover with foil and leave for 10 minutes.

Add a little more water if necessary and the mixture is too crumbly. The goal is to get meatballs without cracks at the end.

Save about 2 tablespoons of the dough and divide the rest into 4 parts. Form each into a small ball (dip your hands in water so that the dough does not stick to you and you can give it a nice and smooth shape).

Put a ball between two sheets of foil for wrapping. Press with the bottom of a pan to make a circle about 0.7 millimeters thick.

Heat oil in a pan and, when hot, carefully place one loaf inside. Fry on both sides and transfer to kitchen paper.

When the loaves have cooled completely, carefully cut them across the middle to get a pocket in them.

Beat one egg in a bowl, season with salt and pepper and carefully pour into the pocket of the bread. Close and glue with part of the separated dough.

Return to the pan and fry for another 4 minutes, depending on the desired hardness of the egg.

Serve the cakes warm.
