Required products :

  • 400 grams of grated celery
  • 400 grams of potatoes, peeled and grated
  • 1 onion, grated
  • pinch of cayenne pepper
  • 6 leaves of sage, chopped + 4 liters for frying
  • salt and pepper to taste
  • 1 egg + more for frying (optional)
  • 4 teaspoons corn flour
  • 6 thin slices of cooked bacon
  • 20 grams of butter

Method of preparation :

Stir in celery, potatoes, onions, hot peppers and sage leaves. Season with salt and pepper to taste. Beat the egg and mix with the corn flour.

Heat the butter until it starts to brown and smell like walnuts. Add the remaining 4 sage leaves and stir. Remove them with a slotted spoon and place on kitchen paper.

Pour the potato mixture into a heated and greased pan and fry the schnitzels until golden and crispy on both sides.

If desired, bake the finished schnitzels with bacon in a preheated oven for a few minutes. Another option is to fry eggs and serve them with schnitzels, crispy sage and bacon.
