Required products:

400 g of potatoes

300 g spinach (frozen)

1 medium carrot

100 g of frozen green peas

1 medium onion head

2 eggs

200 g of yellow cheese

3 - 4 tablespoons fresh milk

350 g canned tomatoes in their own sauce

2 tsp dried basil

2 tsp ground red pepper

3 tablespoons oil

basil leaves

frying oil

breadcrumbs

salt and pepper to taste

Method of preparation:

Boil the potatoes in salted water for 30 minutes. Then peel them and mash them while they are still warm. Boil the spinach and drain the water. When cool, cut it into small pieces. Bring the peas to a boil for 3 minutes, drain with a colander and leave to cool. Cut carrots into large pieces and put in boiling water for 3-4 minutes. Finely chop the onion and fry it in hot oil. Then add the spinach, peas and carrots and let everything cook for 2-3 minutes on medium heat. Mix the prepared vegetables with the mashed potatoes, add the eggs, milk, yellow cheese, season with salt and pepper to taste and stir.

Heat oil (you can also use a deep fryer). Form wet balls of apricot-sized potato mixture with wet hands, roll them in breadcrumbs and fry in hot oil (3-4 minutes in a deep fryer). Arrange the finished balls on a paper towel to drain off excess fat.

Make the sauce: put the tomatoes in a suitable dish, add the dried basil, salt and let them cook for 5 minutes. Pour the hot sauce into a plate, put the potato delicacy in it and sprinkle with paprika, garnish with basil leaves.

Instead of spinach you can use spices - garlic, cumin seeds and a pinch of garam masala - you will get a more spicy taste. Or just add 1-2 teaspoons of curry, but provided that you do not add basil (neither dry nor fresh).
