Required products :

450 grams peeled and diced potatoes
30 grams butter
365 grams flour
15 grams sugar
10 grams pressed yeast (live)
7 grams salt
1 egg for the dough + 1 to spread
sesame seeds for sprinkling

Method of preparation :

Boil the potatoes in a large amount of water, which then drain, saving 60 milliliters of it.
Transfer the diced potatoes to a suitable dish and place on the hob for about a minute to dry. Mash them (coarse puree).

Mix the flour with the salt, sugar and yeast dissolved in the broth you set aside at the beginning. Add the potatoes, butter and one egg. Make a dough that you knead for 8-10 minutes. Leave it for 45-60 minutes, then divide into 9 equal parts. Cover them with plastic wrap and leave for 15 minutes.

Form round loaves, arrange them in the pan and wait for them to rise (about an hour). When this happens, smear their surface with beaten egg, sprinkle with sesame seeds and bake in the oven at 220 degrees for about 15-18 minutes.
