Required products :

  • 3 medium potatoes
  • 3 - 4 tablespoons vegetable oil
  • 1 onion
  • 300 grams of spinach (can be frozen, depending on the season)
  • 8 eggs
  • dried basil, salt and pepper to taste

 

Method of preparation :

Peel the potatoes, cut them into small pieces, pour boiling salted water and cook until soft (about 10 minutes). Then drain the liquid.

Heat the oil in a pan that you can later place in the oven. Fry in it, finely chopped onion for about 5 minutes. Add the potatoes and fry for 5 minutes until golden.

Pour the spinach with the other products (if you use frozen, first thaw it and squeeze it out of the water).

In a separate bowl, beat the eggs with salt, pepper and dried basil to taste. Pour the mixture of potatoes and spinach with them and fry for 5 - 7 minutes (until the eggs are ready), stirring constantly.

Then put the dish in the oven for a few minutes to bake and form a golden appetizing crust on the surface.
