How To Cook Potato Casserole With Onions, Tomatoes And Eggs - Recipe

Required products :

  • 700 grams of peeled potatoes
  • left
  • 1/4 tea cup vegetable oil
  • 1 onion, finely chopped
  • 2 jalapeno peppers, cleaned of seeds and finely chopped
  • 2 tablespoons fresh ginger, finely grated
  • 3 cloves garlic, pressed
  • 1 teaspoon cumin
  • 1 teaspoon Garam masala
  • 1/2 teaspoon coriander
  • 800 grams of canned tomatoes
  • 1/4 cup fresh mint, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 6 eggs
  • freshly ground black pepper to taste

Method of preparation :

  • Put the potatoes in a large saucepan and cover with salted water.
  • Heat over medium heat and cook for 20 minutes until soft.
  • Allow them to cool briefly and cut into slices about 1.5 cm thick.
  • While the potatoes are cooking, heat the vegetable oil in a large skillet over medium heat.
  • Add the onion and saute for 5-7 minutes, stirring occasionally.
  • Add the peppers and cook for another 2-3 minutes.
  • Add the ginger, garlic, cumin, Indian spice and coriander.
  • Stir and cook for another 1 minute.
  • Add the tomatoes and 1/2 teaspoon of salt.
  • When the sauce boils, reduce the heat and simmer for 15 minutes, while mashing the tomatoes with a fork.
  • Add mint and parsley and season with salt and freshly ground black pepper if necessary.
  • Preheat the oven to 180 degrees and arrange the potatoes in a row in a 23-cm pan.
  • Pour the tomato sauce over the potatoes and bake for 20 minutes.
  • Remove from the oven, make six nests in the tomato mixture and beat one egg in each. Season with salt and pepper.
  • Return the dish to the oven and bake for another 8-13 minutes or until the eggs are ready.
  • Sprinkle the potato casserole with fresh mint and serve.
