Necessary products
For the dough:
350 milliliters of fresh milk
2 egg yolks
70 grams butter
500 grams flour
1 teaspoon salt
1 tablespoon sugar
6 grams fast-acting dry yeast
220 grams of boiled whole and unpeeled potatoes
120 grams of sprinkling oil
1 egg for spreading
30 grams of flour for sprinkling on the hob
1/2 teaspoon of salt for the potato layer
1.5 teaspoons of oil for spreading on the baking dish
1 teaspoon of cumin for sprinkling
1 teaspoon of sesame for sprinkling
Preparation :
Add sifted flour, dry yeast, egg yolks, melted or softened butter, salt, sugar to the warm milk and knead the dough.
Let it rise and increase its volume 3 times.
Sprinkle the worktop with a little flour and roll out the dough on it, forming a layer about 1 cm thick.
Grate 120 grams of cold butter on top of the layer, and then the boiled and peeled potatoes, which are also grated. Add a little salt.
Press the potato layer lightly to the dough, fold in half, then in two more. Cover with plastic wrap and leave for 20 minutes.
Roll out a circle about 1 cm thick and fold again twice, cover with foil and let stand for another 20 minutes.
This is followed by rolling (1 cm thick layer) and cutting the "clouds" using a ring or cup, for example.
When the dough circles are ready, arrange them in a pan greased with oil and cover the dish with plastic wrap. Let them double in volume.
Coat the surface with the beaten egg, sprinkle some of the molds with cumin, the rest with sesame seeds.
Bake in a preheated 200 degree oven until golden.
