Required products :

  • 1 tablespoon olive oil
  • 1 onion
  • 1 kg of sweet potatoes, peeled and cut into cubes
  • 1 tablespoon ginger root, peeled
  • 4 and 1/2 teaspoons chicken broth
  • salt and pepper to taste
  • 1/4 teaspoon cinnamon powder
  • 1 can of white beans, drained
  • 1/2 teaspoon paprika
  • 6 tablespoons unsweetened roasted coconut chips
  • 6 tablespoons roasted pumpkin seeds

Method of preparation :

Fry onions, potatoes and ginger for 5-6 minutes. Add the chicken broth, salt and pepper to taste, cinnamon and beans and bring to a boil. Cover with a lid, reduce heat and simmer for 20 minutes. Puree until smooth and season with paprika.

Serve the potato cream soup in bowls and garnish with coconut chips and pumpkin seeds.
