How To Cook Potato Donuts With Garlic, Onion And Aromatic Sauce - Recipe

Required products (for 30 pieces) :

3 large potatoes
1/3 teaspoon liquid cream + 2 tablespoons
1/4 teaspoon butter
1/2 teaspoon fried caramelized onions
3 tablespoons finely chopped green onions
2/3 teaspoon plain flour
1/3 teaspoon rice flour
2 tablespoons garlic powder
1 tablespoon onion powder
1 tablespoon ground red pepper
2 eggs, beaten with a little salt and pepper
2 liters of frying oil

For the sauce:

1/2 teaspoon mayonnaise
1/4 teaspoon buttermilk, kefir or other similar product
1 1/2 tablespoon freshly squeezed lemon juice
1 teaspoon mustard mixed with dill, parsley and green onion
salt and pepper

 

Method of preparation :

Peel the potatoes, cut them into large pieces and cook over medium heat until cooked. Then drain the liquid with a colander and return the potatoes to the pan. Pour the cream, add the butter and mash until smooth.

Mix it with both types of onions (green and caramelized), season with salt and pepper.

Spread the puree evenly on a sheet of parchment and refrigerate to firm. The layer should be a little more than 1 centimeter thick.

Meanwhile, mix the red pepper in the bowl with the two aromatic powders (garlic and onion).

Once the mashed potatoes are firm, cut them into circles. Make a small hole in the middle (maybe without it).

Roll each in a mixture of both types of flour, then dip in beaten eggs with salt and pepper and finally again in flour.

It is important that the donuts are completely covered with the breadcrumbs, otherwise the dough will run out during frying.

Arrange them on parchment and store in the refrigerator compartment or freezer for 4-6 hours. They need to freeze.

Then heat the oil (you can use a deep fryer) and fry the donuts in it until golden (about 5 minutes).

Remove the finished on paper, which will absorb excess fat. Sprinkle with a little salt and ground black pepper and serve hot with the sauce, which you prepare, mixing, the products listed above to make it.
