Method of preparation:
Boil the potatoes in salted water, strain it and mix them with butter, milk, salt, black pepper, paprika, egg yolks and cream cheese. Make a puree, mixing all products until smooth.
Fill a kitchen bag with the puree, cover a tray with a sheet of parchment and inject molds of your choice. Preheat oven to 200 degrees and bake for 25 minutes.
When ready, grease the dukes with oil and sprinkle with paprika. Arrange on a plate and garnish with sprigs of fresh parsley. Serve and eat with pleasure.
