Required products :

1 kg of potatoes

2 tablespoons wheat flour

1 egg

pinch of salt

potato starch (the amount should be equal to 1/4 of the potato mass)

 

Method of preparation :

Peel a squash, grate it and boil it in salted water.

 

Drain them from the liquid and grind them with a press, for example. Put them in a large bowl / pan, stir gently and allow to cool completely (20 - 25 minutes).

 

When this happens, mash the potatoes and press them ("tamping") to obtain a smooth surface. Divide them conditionally into 4 parts and "take out" one part of the dish (you can put it on top of the others).

 

In the resulting space, pour the flour and starch (the latter should be enough to fill the place of the missing part of the potatoes).

 

Add the egg, salt and knead a homogeneous dough. Kneading lasts about 5 - 8 minutes. Shape the dough into a roll with a diameter of 2-3 cm.

 

Cut it into pieces 1 - 1.5 cm thick.

 

Make balls of each, press in the middle with your finger to make a dent.

 

Put a bowl with a large amount of salted water on the stove and when it boils, carefully pour some of the dumplings into it, stir and cook for 1 minute after they rise to the surface. Then remove and arrange in one layer on a plate. After the heat treatment, the dumplings are sticky, but only 2 minutes later they acquire the required consistency and the stickiness disappears.

You can fry until golden, if desired, or serve in this form, but fly with the sauce from the main course or with fried onions.
