Necessary products:
500 grams of wheat flour
150 grams of mashed potatoes (2 - 3 potatoes)
150 milliliters of fresh milk
7 grams of dry yeast
0.5 teaspoon sugar
1 - 2 teaspoons salt
2 tablespoons olive oil
sea salt
finely chopped rosemary
chopped garlic
parsley or dill for sprinkling
Method of preparation:
Boil a few potatoes with the peels, then peel and puree (if very thick, add 2-3 tablespoons of milk). Dissolve the yeast in a little milk with sugar and leave for 10 minutes. Then pour the remaining warm milk, add the mashed potatoes and mix well.
Sift the flour into portions, knead the dough, finally adding olive oil and salt. Knead thoroughly for 10 minutes. Form a ball and make a cross-shaped incision on its surface. Place in a greased pan, cover and leave in a warm place for an hour to rise the dough. Then knead once more and roll out to a thickness of 1.5 - 2 cm. Put in a pan, cover again and leave for another 30 minutes.
Smear the focaccia with olive oil using a brush. Make indentations with your fingers on the bread, sprinkle with coarse salt, rosemary, garlic, parsley (dill). Bake in a preheated oven at 220 degrees for 15 - 20 minutes (until golden).
