Method of preparation:
Boil and peel the potatoes while they are still warm. Cut them into pieces, add salt, pepper, butter and grated onion.
Make a puree using a press and add chopped green onions, turmeric, cheese and finely chopped arugula. Season with lemon juice and add the egg.
Stir the mixture until smooth, form meatballs, roll in flour and fry them on both sides until golden in very hot fat. Drain, arrange on a plate and serve.
