Put the mashed potatoes in a bowl and add the garlic, chives, cheddar and season with salt and pepper. Stir well.
Line a rectangular baking tray with parchment paper, place the mixture on top and flatten. Cover with another piece of paper and leave in the freezer for 30 minutes or 1 hour.
Meanwhile, prepare the sauce - in a bowl, mix the cream cheese and sour cream, add the cheddar and season. Put half the bacon and 2 tablespoons of chives. Mix well and transfer to a small ceramic pan. Flatten with a spatula and top with barbecue sauce. Bake for 30 minutes until bubbles begin to form. Sprinkle the prepared sauce with the remaining bacon and chives.
Cut circles from the frozen potato mixture (with a cup or a ring) and bread them in the flour, then in the egg and finally in the breadcrumbs. Fry them until golden on both sides.
Serve with sauce!
