How To Cook Potato Meatballs With Kale And Lemon Sauce - Recipe

This recipe for potato meatballs with kale is healthy, precisely because the ingredients contain kale, which does not contain fat, is rich in useful nutrients and fiber and has few calories.

Required products :

for lemon sauce :

  • 1/3 tea cup mayonnaise
  • 2 tablespoons cold pressed olive oil
  • 1/2 teaspoon grated lemon peel
  • 1 tablespoon lemon juice
  • 1/4 teaspoon smoked paprika

for the meatballs :

  • 700 grams of potatoes, peeled and diced
  • 4 cloves garlic, pressed
  • 4 teaspoons kale (kale), finely chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup cheese
  • 1 egg
  • 2 green onion stalks, finely chopped
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method of preparation :

Prepare the lemon sauce by mixing all the ingredients and mixing well to distribute evenly. Set aside.

Boil the potatoes and garlic in a large saucepan with boiling water for about 12-15 minutes until soft. In the last 3 minutes, add the kale. Drain the water and return the vegetables to the pan. Reduce the heat and let them dry on low heat for about 2 minutes. Then mash them until a smooth mixture with small pieces of potatoes and kale. Add the breadcrumbs, cheese, egg, green onion, mustard, salt and pepper. Stir well.

Heat 1 tablespoon olive oil in a large skillet over medium heat.

Shape each meatball by scooping 1/3 cup of the mixture and pouring it into the pan. Press lightly with a spoon to a thickness of about 1 centimeter.

Fry for about 3 minutes on each side until golden brown. Repeat with the rest of the potato mixture, adding the remaining olive oil when needed.

Serve the potato meatballs warm, garnished with mayonnaise sauce.

Tip:  You can always experiment and replace one of the ingredients if you don't like it. Use spinach instead of kale. Instead of lemon sauce, serve the meatballs with tarator, milk sauce or vegetable salad.
