Required products :

  • 3 tea cups boiled mashed potatoes
  • 2 egg yolks
  • 1/4 tea cup finely chopped green onion feathers
  • 1/2 cup finely chopped bacon (fried)
  • 1/2 tea cheddar - grated
  • 2 tablespoons chives - finely chopped
  • 4 large garlic cloves
  • 1 1/2 teaspoons finely grated ripe mozzarella
  • 3 teaspoons oil

About the breading:

  • 3 eggs - broken
  • 1 teaspoon wheat flour
  • 1 cup large breadcrumbs or bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper

Method of preparation :

In a large bowl, combine the mashed potatoes, egg yolks, green onions, bacon, cheddar and chives. Mix well to combine the products.

Cut the onion into thick slices. Choose the larger ones and fill them halfway with the potato mixture. Make a small hole in the middle and put the grated mozzarella. Cover with more mixture and fill the onion circle well. Arrange in a pan and freeze for 1 hour.

In a bowl, mix the breadcrumbs with the spices for the breading. Bread the onion rings in flour, then in the beaten eggs and finally in the breadcrumbs. Set them aside for 5 minutes.

Heat oil to 180 degrees and fry the potato meatballs for 3 minutes on each side until browned.

Serve with sauce if desired, sprinkle with little chives.
