Required products :

  • 500 grams of potatoes, peeled and diced
  • 25 grams of butter
  • 400 grams of canned salmon, drained
  • 2 tablespoons fresh parsley, finely chopped
  • peel of 1 lemon, grated
  • 4 green onion stalks, finely chopped
  • salt and freshly ground black pepper
  • 3 tablespoons oil

Method of preparation :

  • Boil the potatoes for 15-20 minutes until soft.
  • Drain the water, cover with a lid and return to the hob for 1-2 minutes until dry.
  • Knead them well and add the butter. Stir.
  • Add salmon, parsley, lemon zest and green onions.
  • Season with salt and freshly ground black pepper and mix well to distribute evenly.
  • Moisten your hands and form 8 meatballs from the mixture. Refrigerate for 30 minutes.
  • Heat the oil in a large skillet over medium heat.
  • Fry the fish meatballs for 3-4 minutes on each side until golden brown.
  • Serve them warm, garnished with lettuce.
