Boil the potatoes in a saucepan of water, then drain and transfer to a large bowl to cool. Squeeze 1/2 cup of spinach through a juicer. Pour the resulting juice into the bowl with the chilled potatoes and mash until smooth. Finely chop the remaining spinach and add to the mashed potatoes.
Heat 1 tablespoon olive oil in a pan and fry the onion and garlic in it for 5 minutes, stirring often. Cool and add to the mashed potatoes.
Mix the flax flour in a small bowl with 2 tablespoons of water and set aside to thicken. Pour the flax porridge together with the baking powder and salt into the mashed potatoes and stir. Form small meatballs from the mixture and roll them in flour.
Turn the oven to 220 degrees and cover the bottom of the pan with parchment paper.
Heat 1 tablespoon olive oil in a pan and fry the meatballs for about 3 minutes per side. Repeat until the potato mixture is finished. Arrange the fried meatballs in the pan and bake until golden brown for about 10 minutes. Serve with milk sauce or salad.
