How To Cook Potato Muffins With Bacon And Cheese - Recipe

Learn how to cook "Potato muffins with bacon and yellow cheese". Delicious recipe.

Required products :

  • 1 kg of potatoes
  • 2 1/2 tablespoons olive oil
  • 1 cup grated yellow cheese
  • 3 slices of bacon, finely chopped
  • 3/4 teaspoon salt
  • freshly ground black pepper
  • 1 tablespoon fresh parsley, finely chopped

Method of preparation :

  • Preheat oven to 180 degrees.
  • Heat 1/2 tablespoon olive oil in a pan over high heat and bake the bacon for 2-3 minutes.
  • Transfer it to kitchen paper to drain off excess fat.
  • Peel and grate the potatoes and transfer them to a colander. Rinse under cold running water and drain.
  • Squeeze the potatoes in handfuls and transfer them to a large bowl.
  • Add most of the bacon, 2 tablespoons olive oil, salt, pepper and cheese. Stir well.
  • Grease a 12-well muffin tin with oil and spread the mixture. Slightly flatten with the back of a spoon.
  • Bake for 30 minutes until golden brown.
  • Allow the potato muffins to cool briefly before removing them from the pan.
  • Serve warm, garnished with the remaining bacon and chopped fresh parsley.
