Required products :
- 2 teaspoons olive oil
- 120 grams of raw chorizo sausage, finely chopped
- 1 potato, finely chopped
- salt and pepper
- 2/3 tea cup grated Manchego cheese
- 8 eggs
- 1 pinch of cayenne pepper (or more to taste)
Method of preparation :
Preheat oven to 175 degrees and grease a 24-muffin tin with grease of your choice.
Heat olive oil in a pan and fry the sausage until browned - about 4 minutes.
Add the potatoes and continue to fry until cooked, season. Drain on a napkin.
Sprinkle 1-2 teaspoons of cheese on the bottom of the muffin tins, and on top put 1-2 tablespoons of the mixture of potatoes and chorizo.
Beat the eggs, salt them and pour the products into the molds. Sprinkle with the remaining cheese and bake for 17 minutes at 175 degrees.
