It often happens that small amounts of food remain uneaten in the refrigerator, which we do not know how to use and usually throw away. In these easy pancakes you can use the potatoes from the night before and get a very attractive breakfast or lunch for you and your family.

Mash the potatoes to make a fine puree (or use already prepared). Grate the cheddar cheese with a grater and chop the green onions very finely. Add them to the potatoes. Add 3 tablespoons of flour and egg.
Mix well with your hands and make 12 small balls of the mixture.
Heat a non-stick pan and put 2-3 tablespoons of olive oil in it. Wait for it to warm up. Thin each potato ball with your hands and roll in flour. Fry until golden on each side. If necessary, add more fat before putting the next ones. Remove the pancakes on a piece of kitchen paper to drain off excess fat. Serve with a spoonful of sour cream.
Note: If the texture of the potato mixture seems very runny, add a little more flour to easily shape the pancakes.
