How To Cook Potato Salad With Bacon, Green Onions And Fragrant Dressing - Recipe

Required products :

750 grams of potatoes
1/2 - 1 chili red pepper, finely chopped
2 stalks of celery, finely chopped
1/3 - 1/2 tea cup finely chopped onion (can be red)
1 - 1 1/4 tea cup of peas (can frozen) a
few feathers green onions
4 tablespoons finely chopped parsley
1 teaspoon olive oil
250 grams finely chopped bacon

For the dressing:

3 tablespoons olive oil
1-2 tablespoons Dijon mustard seeds
1 tablespoon white wine or balsamic vinegar
1 teaspoon honey optionally
salt and ground black pepper to taste

Method of preparation :

In a suitable bowl, mix olive oil with mustard, add vinegar, salt and ground black pepper to taste. If desired, add a teaspoon of honey. Beat with a wire whisk or a fork until smooth.

 

The dressing is ready. Take care of the salad.

Boil the potatoes whole, then peel and cut into large cubes or random pieces. Blanch the peas for 2-4 minutes in boiling water.

You should take a large salad bowl and mix all the prepared products (without bacon).

 
When you mix them, pour the aromatic sauce and cover the dish with plastic wrap to keep the salad warm and absorb the flavors and aromas at room temperature.

Meanwhile, fry the sliced ​​bacon in 1 teaspoon of olive oil over low heat. You should get crispy pieces, not completely fried.

Pour the bacon into the salad bowl together with the fat released during cooking (or part of it - to taste) and serve.
