How To Cook Potato Salad With Mayonnaise Dressing And Capers - Recipe

Required products :

  • 1 kg of potatoes
  • 2 large eggs
  • 1/2 bunch green onions - chopped
  • 2 tablespoons capers
  • 1 teaspoon mayonnaise
  • 1/4 teaspoon Dijon bitter
  • 1/4 tea cup finely chopped pickles + 1/4 tea cup brine
  • 1/2 small head of red onion
  • 2 tablespoons parsley
  • the juice of 1/2 lemon
  • olive oil

Method of preparation :

Wash the potatoes and eggs. Put them in a large saucepan and cover them with cold water and boil them. Boil the eggs for 12 minutes and take them out of the pan, and let the potatoes cook until done.

Finely chop the pickles, onion and parsley.

Set aside some of the capers and green onions for garnish. Put the rest in a bowl and combine with mayonnaise, mustard, pickles and brine, parsley, green and red onions, and lemon juice. Season with salt and pepper (note that capers and pickles are salty).

Peel the eggs and grate them in the mayonnaise mixture. When the boiled potatoes have cooled, peel them and mash them by hand directly into the bowl (you can also cut them into small cubes). When you add all the potatoes, mix well with the dressing, serve and sprinkle with parsley, set aside capers and onions.

Drizzle with a little olive oil.
