Required products :

  • 3 large potatoes, cut into cubes
  • 500 grams of ham, cut into cubes + 1/2 tea cup for sprinkling
  • 1 teaspoon canned corn, drained
  • 3 teaspoons chicken broth
  • 1/4 tea cup butter
  • 1 onion, cut into cubes
  • 2 tablespoons garlic, minced
  • 1/4 tea cup flour
  • 1 teaspoon oregano
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 1 pinch of paprika
  • 2 teaspoons milk
  • 1/2 cup sour cream
  • green onions for garnish / or fresh parsley /

Method of preparation :

 

  • In a large saucepan, melt the butter over medium heat.
  • Stew the garlic and onion for about 4-5 minutes until soft.
  • Add the corn, stir and cook for another 2 minutes.
  • Sprinkle with flour and stir again.
  • Add the potatoes, chicken broth and spices.
  • Cook the soup for about 15-20 minutes or until the potatoes are fully cooked, stirring occasionally.
  • Add the ham and milk and cook for another 5 minutes until the soup thickens.
  • Meanwhile, saute 1/2 cup of ham until crispy.
  • Remove the pan from the heat and add the sour cream. Stir.
  • Pour the soup into bowls and garnish with a few grains of corn and crispy pieces of ham.
  • Serve warm, sprinkled with green onions or fresh parsley.
