How To Cook Potato Soup With Pieces Of Bacon, Garlic And Mushroom Broth - Recipe

Required products :

  • 3-4 potatoes
  • 1 carrot
  • 1 parsley root
  • celery
  • 2 tablespoons flour
  • 2 tablespoons chopped bacon
  • 1 onion
  • ground black and red pepper
  • 1/2 teaspoon marjoram
  • 2 cloves garlic
  • 500 grams of mushrooms

 

Method of preparation :

First, boil the mushroom broth. Clean and wash the mushrooms, put in a saucepan, pour cold water and place on the stove. Boil for 15 minutes, drain the liquid and pour clean water. Followed by another 15 minutes of boiling, change the water again and let the mushrooms cook for 40 minutes.

Peel the potatoes, cut them into small cubes. Do the same with carrots, parsley root and celery.

Melt the pieces of bacon in a pan (you can use lard). The dish you choose to fry the vegetables should be deep. Pour them into the fat sequentially in this order: onions, carrots, celery, potatoes, parsley root.

Five minutes later they will be semi-finished.

Melt the bacon / fat in another pan and fry the flour, pour in a few tablespoons of the mushroom broth. Stir thoroughly to avoid lumps.

Pour the resulting broth over the vegetables, pour the remaining mushroom broth and simmer over low heat for 20 minutes.

Crush the garlic cloves together with the marjoram and add the mixture to the soup. Season with salt, black and red pepper, stir and ten minutes later remove from the heat.
