Required products :

  • 4 upper chicken legs
  • 1 tablespoon olive oil
  • 500 grams of red potatoes
  • 4 cloves garlic - crushed
  • 2 tablespoons tomato paste
  • 1 teaspoon chicken broth
  • 1 head of broccoli - roses
  • 1 teaspoon cooking cream
  • 1 cup grated Parmesan cheese
  • 1 cup baby spinach
  • parsley to sprinkle when serving

Method of preparation :

Season the meat with salt and pepper.

In a large deep pan, heated to medium heat, fry the meat for 10 minutes on each side, first placing it skin side down. Once it acquires a golden color, take it out on a plate.

Put the quartered red potatoes in the pan and season with pepper and salt. Fry them for 4 minutes until they acquire a tender crispy crust.

Add the garlic and tomato paste, stir and leave for 2 minutes to cook the ingredients. Add the broth and broccoli, season again with salt and pepper and simmer for 5 minutes.

Pour the cream into the pan, add the spinach and parmesan. Stir and add the chicken. Allow to cook until the sauce is reduced and the potatoes are fully cooked - about 15 minutes.

Serve the dish sprinkled with parsley.
