Boil the potatoes whole, peel them and cut into thin slices. Cut the sausages in half.
Roll out the puff pastry into a rectangle measuring approximately 30 by 35 centimeters. Place in a pan and grease the surface with oil. Arrange potato pieces and sausages on this base.
Sprinkle with spices and salt if necessary. Put slices of the cheese you have chosen, potatoes again (leave the edges free, no products). Close the filling with the dough, and you can make a braid.
Coat the surface with the beaten egg yolk and bake the strudel until golden in the oven at medium temperature (about 30-35 minutes are enough).
