Required products :

  • 250 grams of potatoes
  • 2 tablespoons olive oil
  • 6 eggs
  • 8 stalks of green onions, finely chopped
  • 2 cloves garlic, chopped
  • 150 grams of frozen peas
  • 4 tablespoons finely chopped mint
  • 100 grams of goat cheese

Method of preparation :

Preheat oven to 190 degrees.

Cut the potatoes into large pieces and pour 1 tablespoon of olive oil. Bake for 10-12 minutes.

Meanwhile, fry the onion and garlic in 1/2 tablespoon of olive oil. If possible, use a pan with a fireproof handle.

Season the eggs and beat, add onions, potatoes, peas and mint.

Pour the remaining olive oil into the pan and add the mixture, sprinkle with goat cheese on top. Fry on a hot plate for about 6-8 minutes, then bake the dish in the oven for another 10 minutes. Do not overdo the baking so as not to dry the tortillas unnecessarily.
