Required products :
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 tablespoon fresh thyme, finely chopped
- 1 kg of small potatoes, halved
- salt and pepper to taste
Method of preparation :
- Heat olive oil and butter in a large skillet over medium heat.
- When hot, add the thyme and stir briefly.
- Arrange the potato halves in the pan with the cut side down.
- Cook over medium heat for 10 minutes until a crispy brown crust forms.
- Turn them over, cover the pan with a lid and cook for another 8-10 minutes or until fully cooked.
- Season with salt and pepper to taste and serve.
