Required products :

  • 220 grams of chard (or spinach)
  • 5 whole eggs
  • 4 proteins
  • 1/2 teaspoon salt and pepper
  • 350 grams of baby potatoes, halved
  • 2 tablespoons olive oil
  • 1/2 cup finely chopped onion
  • 6 cloves garlic, chopped
  • 60 grams of finely chopped chorizo ​​or other spicy sausage
  • 3 tablespoons grated Manchego cheese

Method of preparation :

Preheat oven to 175 degrees.

Cut the chard leaves and stems into two separate piles of vegetables.

Season the eggs and egg whites and mix with a wire.

Boil the potatoes in 1 cup of water until soft - for about 5-10 minutes, drain.

Put a tablespoon of oil in a fireproof pan (or small pan) and fry half of the potatoes until golden brown. Transfer to a bowl and repeat with the remaining potatoes.

Heat the remaining 1 tablespoon of olive oil and fry the stalks of chard, onion and garlic until soft. Finally, put the vegetable leaves and after they melt, transfer to the potatoes.

Fry the chorizo ​​and put it in the bowl with the potatoes.

Return the whole mixture of potatoes and chorizo ​​to the pan. Drizzle with eggs and sprinkle with cheese. Bake for about 25 minutes. Cool for 15 minutes, then serve.
