Arrange the bacon strips in a pan and pour a few tablespoons of water. Stew over low heat until the fat melts and then remove the bacon from the pan.
Grate the potatoes and onions, gently drain the juice. Season with pepper, salt, stir. Fry until done in the bacon fat, adding oil or butter, stir.
Mix the eggs with half of the grated yellow cheese and pour over the potatoes when they are fried. Cover with a lid and cook over low heat for about 3 minutes.
Then sprinkle with the remaining yellow cheese and chopped green onions, add the bacon and serve immediately.
You can garnish with pickles.
