Peel the potatoes, cut them into medium-sized cubes and pour into a pan (use glass, ceramic or silicone).
Add the sliced carrots, onions (in semicircles) and stir.
Season the vegetables to taste and pour in the oil. Stir again.
Cover with aluminum foil and bake in the oven at 180 degrees.
Just before the potatoes are completely ready, pour the beaten eggs with the milk (you can season).
Distribute the mixture evenly and return the dish to the oven until the potatoes are fully cooked (about 10 minutes).
Sprinkle with chopped parsley or other preferred fresh green spices and serve.
