Necessary products
For the dough:
90 grams butter
4 eggs
1 teaspoon flour
2 tablespoons sesame seeds
1 teaspoon dark sesame oil
1 teaspoon sugar
pinch of salt
For the stuffing:
300 grams of cream cheese
200 milliliters of whipping cream
curry powder
Method of preparation :
Stirring, roast the sesame seeds in a dry pan over medium heat until light golden. Allow to cool.
In a bowl with a thick bottom pour 3/4 tea cup of water, put the diced butter, sugar and a pinch of salt. Place on the stove and let the mixture boil. Immediately pour all the flour, remove from the heat and stir until smooth. Return the dough to the hob at minimum temperature. The dough should not stick to the walls of the dish when you mix it with a wooden spoon.
Then transfer the dough to a bowl and beat the eggs one by one, stirring thoroughly after adding each. Pour sesame seeds and oil into the mixture, stir once more and fill a pastry syringe with the dough.
Spray a tray with water, cover with parchment, spread and form the profiteroles on it, arranging them at a distance of 2-3 centimeters between them. Their size should be the size of a walnut.
Place in a preheated 180 degree oven for 10 minutes, then reduce the temperature to 120 and bake for another 7-10 minutes.
Let cool and dry slightly, make small incisions at one end and work with the filling.
Whip the cream with the curry and salt to taste. You should get a firm foam, which you mix with cream cheese.
Fill the profiteroles with this cream and serve immediately.
