Separate the egg whites of two eggs in a bowl. Add both types of sugar, lemon juice and beat with a mixer for a minute.
Put a pot of water on the stove. Once the liquid has boiled, place the bowl of egg whites over the bowl, the water not touching the top bowl.
Beat the egg whites with a mixer until they stop flowing and keep their shape well. This will take about 4-5 minutes.
Then remove the foam container from the water bath and beat for another 4-5 minutes.
When the cream has cooled enough, you can decorate a cake or other dessert with it.
