How To Cook Protein Cream With Caramel And Coffee (for Cakes And Pastries) - Recipe

Required products :

  • 200 grams of sugar
  • 100 milliliters of water
  • 4 raw egg whites
  • 1/2 teaspoon instant coffee

 

Method of preparation :

First, make caramel coffee. Dissolve the sugar in the hot water, add the coffee and let the mixture boil until thickened over low heat, stirring. It should simmer for about 15-20 minutes and turn off the stove.

 

Beat the egg whites into a thick foam and gradually add the hot (but not boiling) caramel to them, without stopping to beat.

 

If the sugar mixture is not very thick, pour it in a thin stream.

Beat on high speed until you get a smooth cream (about 3-4 minutes). It retains its shape perfectly, has a delicate taste, pleasant aroma and is suitable for the preparation of all kinds of desserts, cakes and pastries, including as a filling for eclairs.
