Necessary products:

  • 85 grams of butter
  • 100 grams of raisins
  • 1 teaspoon baking soda
  • 100 grams of powdered sugar
  • 70 grams of unrefined brown sugar
  • 2 eggs
  • 170 grams of self-swelling flour
  • 1/4 teaspoon cinnamon
  • vanilla essence or vanilla powder
  • 1 teaspoon black tea

 

For caramel topping:

  • 2 tablespoons margarine
  • 1 - 1.5 full tablespoon of golden syrup
  • 50 grams of unrefined brown sugar

 

Method of preparation:

If you do not have self-swelling flour, you can prepare it yourself by mixing 1 teaspoon (250 ml) of plain flour with 1.5 teaspoons of baking powder and a pinch of salt.

Preheat the oven. Boil the tea with water (not milk), after a few minutes take out the packet and soak the raisins for 5 minutes. Meanwhile, beat the butter with the sugar, add the eggs. Then flour the vanilla and cinnamon, mix well. Remove the raisins from the tea and grind them together with 1 tablespoon of milk using a blender. Add them to the dough, add the soda. Pour it into a greased form and put in the oven for 35 minutes.

While the cake is baking, make the topping. To do this, mix all the ingredients listed for its preparation, mix and pour the combination into a container with a non-stick coating. Put on the fire and stir until bubbles form. When this happens, turn off the stove, but do not stop stirring until the bubbles fall.

Remove the baked dessert (check the readiness with a toothpick) from the oven and pour evenly with the caramel topping.

The pudding is served hot with vanilla ice cream.
